Palak Paneer is already a very popular dish among those who love Indian Cuisine. Winter in India brings a lot of green leaves and almost every kitchen gets the feel and aroma of spinach. Spinach known as Palak in Hindi.
Paneer is always loved , whether it is in salad, paratha, gravy or dry preparation. Palak Paneer is a combination of green spinach leaves and the paneer. Often Palak Paneer is prepared as a gravy dish but that is not the only way to make a dish of Palak paneer. We can cook Palak paneer as a dry side dish, it is a very good combination to make stuffed paratha and sandwiches as well.

Here is the recipe of Palak Paneer which can be prepared without oil and without any compromise on the taste. It is so tasty that no one even finds a difference after tasting whether it is with or without oil. Here is the detailed recipe to prepare Palak Paneer without Oil !
Recipe Details : Palak Paneer without Oil Recipe (servings 3 – 4)
Ingredients for Palak Paneer without Oil Recipe
- Palak / Spinach Leaves : 2 Bunches
- Paneer / Cottage Cheese Small Cubes : 1 + 1/2 cup
- Ginger : 1/2 inch piece
- Green Chili : 2 medium
- Garlic : 3 – 4 cloves
- Onion : 1 medium
- Tomato : 1 medium
- Cumin Seeds : 1 + 1/2 tsp
- Cloves : 2
- Bay Leaf : 1
- Coriander Powder : 1 tsp
- Turmeric Powder : 1/2 tsp
- Red Chili Powder : 1/2t tsp (adjust to taste)
- Salt to taste
- Garam Masala : 1/2 tsp
- Kasoori Methi ? Dry Fenugreek : 1 tsp
Preparation for Palak Paneer without Oil
In order to make Palak Paneer without Oil, first of all, we should wash and roughly chop Palak / Spinach leaves. Once washed, the palak / spinach leaves will be cooked in water. For this, take a deep pan and add 1 cup water in it. Bring the water to boil on medium flames and leave chopped Palak / Spinach leaves in it. Keep covered for 5 minutes and keep aside. This softens the leaves.

After 5 minutes the leaves are immersed in hot water, now just take the leaves out and make a fine paste of Palak leaves in a grinder. We should only grind the leaves once it is at room temperature. Avoid grinding the hot leaves.

Now about paneer for Palak Paneer without Oil. Some people like to add shallow fried paneer in the Palak gravy for Palak Paneer whereas some people prefer non fried version of paneer in the gravy. If you prefer the non fried version of paneer, just keep the paneer cubes in warm water. If you like the fried version of paneer in Palak Paneer, for that we won’t be using any oil as well but we can give that golden brown color to paneer just by heating it in a non stick pan.

For this, take a non stick pan and turn the flames to low. Once pan is hot, leave the paneer cubes in it. At first the paneer cubes release water and then starts to be golden in color. It is up to you, how golden or golden brown color you like for the paneer. But you can very well do that without oil in a non stick pan.

Once paneer is cooked to golden brown color without oil, keep it aside and now we can move ahead with the masala preparation for Palak Paneer without Oil recipe.

In a Jar, add ginger, garlic, chopped onion and green chili and make a fine paste of the mix.

Make paste of the chopped tomato. If you wish to use tomato puree, you can replace tomato paste with puree.
How to make Palak Paneer without Oil
Now take a kadahi / wok / or cooking pan and heat it to medium. We won’t be adding any oil even to make masala and yet we can prepare a very tasty Palak Paneer gravy.

Once the pan is hot, add cumin seeds in it. Along add cloves and bay leaf. Roast the mix till cumin seeds release aroma and starts turning golden color. Once the cumin seeds are golden in color, now crush the mix. You can use a bowl to crush the mix or if you prefer to grind the mix, please do so.

Once the mix is crushed, add the grounded fine paste of onion, ginger, garlic and green chili in it. Keep stirring so that the masala paste does not stick to the bottom of pan. Once the raw smell of onion and garlic is gone while cooking, we add dry spices in it.

Add coriander powder, turmeric powder, red chili powder and some salt.

Now add tomato paste or puree. Mix well the ingredients and keep cooking on medium flames. Once tomato is cooked completely (around 2 – 3 minutes) , now add Palak /Spinach puree in it. Alon with Palak Puree, we can add the leftover water from the first step which we used to soak leaves.

Cover the pan and keep cooking on medium flames. Bring the puree to boil. It takes around 4 – 5 minutes. When Palak is cooked, it changes the color from light green to darker shade of green. Once palak / spinach puree is boiling, add the paneer cubes in it. Paneer does not need much cooking . If Paneer is cooked for long , it hardens, that is why after adding paneer in the puree we can switch the flames to off. Cover the pan and leave for 5 minutes.

Without oil version of Palak Paneer gravy is ready now. Add kasoori methi / dry fenugreek before serving and it adds a nice aroma and flavor to the Palak Paneer gravy.
